Ingredients:

  • 2 scallions, sliced
  • 1 knob ginger, sliced
  • 1 tbsp vegetable oil
  • 1 cup clams
  • 1/2 cup thai basil
  • 70g Chantaboon rice noodle
  • 1 tbsp sambal olek
  • 2 tbsp tamarind concentrate
  • Splash Squid Brand fish sauce
  • Splash Shaoxing cooking wine
  • Pinch white pepper


Method:

  1. Stir fry the sambal, scallion and ginger out.
  2. Add clams & Shoaxing wine. Put a lid on your pot and let your clams steam out. Drop the noodz into boiling water.
  3. Add your tamarind to make a sauce. Season with fish sauce and white pepper.
  4. Add your noodz and Thai basil.
  5. Serve
