Ingredients:
- 2 scallions, sliced
- 1 knob ginger, sliced
- 1 tbsp vegetable oil
- 1 cup clams
- 1/2 cup thai basil
- 70g Chantaboon rice noodle
- 1 tbsp sambal olek
- 2 tbsp tamarind concentrate
- Splash Squid Brand fish sauce
- Splash Shaoxing cooking wine
- Pinch white pepper
Method:
- Stir fry the sambal, scallion and ginger out.
- Add clams & Shoaxing wine. Put a lid on your pot and let your clams steam out. Drop the noodz into boiling water.
- Add your tamarind to make a sauce. Season with fish sauce and white pepper.
- Add your noodz and Thai basil.
- Serve
