Why we chose this: when it hits the wok, caramel aroma fills the kitchen, make you seem like a pro.
Even before you cook with it, the aroma is a little lux. Maybe it’s the ageing. But you get this toffee, candy-like drift, rising out of the bottle, quite unique to this brand.
Taste: A little fairy floss, a little bubblegum even.
Uses: When you need to tame the rawness of veggies, meat or fish, Shaoxing is your solution. Use it as you stir fry, braise or even add some in your broths. Shaoxing is not used only to tame strong flavours but it adds its own character and thereby, overall depth to your dishes - that’s why it’s used to lift staples (stir fry noodles/rice and soups) too. Don’t limit yourself to using it just for Chinese and Southeast Asian cooking either, try it as an alternative to other cooking wines.
