Why we chose this: Necessary for every Asian kitchen but currently scarce,  through our established connections with organic growers in India, we were able to secure a supply.  

With the outer skin of the peppercorn removed, white pepper filters out some of the aromatic dynamics of black pepper but keeps the heat.

As such, it does not tend to compete with other ingredients, rather, it enhances. This is one of the reasons why white pepper is used across so many light broths and steamed dishes.


Taste
: Medium heat, slightly earthy.

Uses: Use during and after cooking soups and broths, from chicken corn soup to pho and boat noodles. Add it over a bowl of congee. Sprinkle lightly over steamed fish, chicken or vegetables. Can be used in marinades.
