At the Yunding Dragon Well Estates, seasoned tea-crafters hand-press tea leaves against hot woks into its signature spear-like form. This tradition has been handed down from generations to the extent where the women in the precinct are said to be born with iron palms.

The estates occupy up to 1000m in height of terraced plantations along the hills that surround Qiandao (Thousand Island) Lake. This is an autumn flush, with a heartier and more intense flavour than the spring-picked cousin.

Dry leaves: green flat spear-like leaves
Liquor: jade colour
Taste: roasted corn, chestnuts
Process: withered, shaped, wok-fired

Iced Tea x3 Concentrate

1. Add 60g of rock sugar into a pot.

2. Add 1L of boiling water, stir until dissolved.

2. Allow to cool to 80C then add 24g Dragon Well. Stir until leaves are immersed.

3. Steep for 6min. Strain and allow to cool.

To serve: Fill each glass 1/3 full with the Dragon Well concentrate. Top up remainder of glasses with ice cubes and iced water. Garnish with a slice of fresh cucumber.
