The “white” in this tea name refers not to the category of tea but rather this rare varietal’s light leaf colour during mild temperatures in its origin of Anji County. Its short hand-picked harvesting period, its iconic long folded blade shape and unique savoury flavour and creamy mouthfeel together with its high amino acid % (> twice the avg. green tea) makes this tea one of the most sought after greens each year.
Dry leaves: long, thin green blades
Liquor: light yellow colour
Taste: oats, peach, sweet pea
Process: hand-picked, shade withered, fixed via heat panning, hand-shaped and re-heated.
