白牡丹 (Pai Mu Dan)

The first plump white buds that emerge at the beginning of spring are plucked, along with two leaves. This is one of the least-processed of all teas, being only sun-withered then slow-heated, creating a delicate flavour and aroma of white flowers and undergrowth.
On the palate there is both a sweet and refreshing tartness of young peaches, with a biscuity note on the backdrop.
Dry leaves: one bud, two leaves - bud is needle-like covered with white downy fur and leaves are light green with some amber
Taste: young peaches, light vegetal and biscuit
Process: withered, temperature-controlled slow-dried
