Not all cinnamons are created equal. Amongst its peers, Cinnamomum verum aka Ceylon cinnamon aka "true cinnamon" is said to be the most delicate in both flavour and structure and the healthier choice by way of having the lowest levels of coumarin while pertaining high levels of vitamins and antioxidants. It is a close cousin of the hardier Chinese cinnamon cassia and the most intensive Vietnamese Saigon cinnamon.
