Why we chose this: one of the most lux of the retail brands, plenty of shredded scallop, textural and taste explosion

Basically the more scallop the more you are loved and by George, LKK XO sauce loves you.

For the uninitiated, XO sauce was invented in 1980s Hong Kong. As an expression of how much chefs valued their diners, the most expensive ingredients such as scallops and prawns were used to make a sauce and given with compliments. XO Cognac a brand used synonymously as the term for prestige in Hong Kong vernacular was thus chosen as the sauce’s namesake.

Back to this LKK gourmet sauce. The moment you spoon some out you will notice the abundance of fibrous dried scallops and tiny shrimps - this is an indication of quality. A better indication still is the taste. Just a dollop and you’ll be hooked.

Taste: Umami-rich and moreish, fried spicy seafood, textural. A harmonious balance of crunchy, chewy, saucy.

Uses: Serve it on its own in a small dish as an appetiser. Use it in classic Cantonese and Hong Kong dishes such as pippies in XO sauce, steamed or stir fried rice rolls, stir fried veggies. Have it as a dipping sauce for hotpot and soup ingredients or straight up with a bowl of steamed rice.
