A high percentage of organic rice koji gives this classic fermented soybean paste its sweetness. Coupled with a shorter fermentation process compared to its red cousin (reminiscent really of white vs red tea in our world), Hikari’s white miso paste has broad appeal no matter where you fall in the spectrum of fermented foods fandom.
Equally vast is its usage. Making soups can be as simple as a teaspoon in a mug of hot water - you may snicker but that’s the true test of its genius. Adding hot water and nothing else already gives you a velvety, soy ready-to-drink nourishing broth. Then of course you can layer it with vegetable, fish or meat stock and traditional dashi recipes to make a more complex soup.
It’s not limited to Japanese soups or even just soups. Use it in making mushroom cream soups to add a sweet almost Swiss cheese-like flavour. Use it as a marinade if you tire of soy sauce or salt. Use it in a dressing for both texture and taste.
