Why we chose this: a natural Japanese soy sauce made with centuries old fermentation cultures yielding a well-balanced drop.

Yes, the whole purpose of Asian Staples is to minimise and get you down to the basics so your pantry won’t look like a hidden mess of where condiments go to be forgotten and die. So why more than one savoury soy sauce product?

The reason is at its simplest, there are at least two main purposes for a ‘general’ soy sauce. There are times you want one to be the feature and there are times when you just need a complement.

The Chinese style light soy with its saltier and more acidic profile is ideal for subtle dishes like those that are steamed (dumplings), boiled (soup ingredients used as dishes), or requiring “cut-through” (think gamey northern/western Chinese lamb).

Tamari, generally with a lower sodium content and made with a different mould species yields a thicker, milder and nuttier sauce. Spiral’s process is unique, inside the fermentation kegs lives 200-300 year-old microorganisms, that together with careful pressing and pasteurisation gives their tamari a very even, mellow, rounded drop.

Cultural allegiances aside, it stands to reason that Tamari would therefore be more suitable as an adjunct to Japanese dishes where either the hero ingredients need to be complemented (sushi) or conversely, the soy sauce acts as part of an ensemble where other salty ingredients are present (dashi).

The flavour of Spiral’s tamari is second to none. Put it to the test by making “cat rice” - nothing more than a bowl of steamed rice topped with bonito flakes and a few dashes of tamari.

Tamari is also a wheat-free alternative to other soy sauces.
