Sriracha 481g - Huy Fong
Why we chose this: perfectly balanced even when open to seasonal variations in chilli heat and colour. Other brands can be too sour, too much garlic, not enough heat. Original and clearly still unsurpassed.
The adage “original and still the best” is most apt when describing this iconic chilli sauce.
David Tran, the man behind Huy Fong - the rooster brand - is the inventor of this genre of sauce, named after the Thai sea-side village to which he was inspired.
Many have tried to imitate and just as many have failed.
Perhaps what makes this original sriracha taste unparalleled is that it is the result of one man’s unique journey that can’t truly be replicated. Thai influenced, ethnically Chinese, fleeing Vietnam and showing gratitude for being accepted as a refugee, he uses all American ingredients, lending the sauce its renowned southern Californian pepperiness to an Asian recipe.
Taste: Usually medium heat (this current batch seems to have upped the intensity by a couple notches, may be due to seasonal variation in chilli), good balance of sweet, sour, savoury and peppery notes.
Uses: Cross-cultural culinary applications from pho to pizza.

Ingredients: Chili (83.23%), sugar, salt, garlic (3.6%), acetic acid, potassium sorbate and sodium bisulfite at preservatives, xanthan gum.
Packaging: Squeeze bottle with twist to close top.
Storage instructions: Store in a cool dry place.
