Though invented in Japan, Nissin's Demae Iccho 出前一丁 was quickly adopted by Hong Kongers as their go-to instant noodles ever since its introduction to the island administration in 1970. So much so that it has been well worked into the fabric of its food culture. In Cantonese, it simply goes by the jyutping (or "Canto-romanisation" if you will) of the last kanji character (),"ding". So in any given cha chaan teng, you can order luncheon meat on "ding", pork chop on "ding", preserved veg on "ding" and on.

The sesame oil flavour is an original and still the best. To this day, Hong Kongers will bang on about the fancier flavours like black garlic oil tonkatsu, five spice beef, curry etc. - but forget all that. It's not that these flavours aren't great, it's just that you don't need them. This original has the general umami hit with a base soya sauce note to cover all and with the beautiful aroma of sesame oil on top, it's a perfect canvas for customising to your heart's content or have as is.

Taste: When cooked right, it should be just a touch puffy and a lot of fun. It's not a dense noodle, it's a light snack. With a soya sauce flavour base (yet, not salty),  the sesame oil on top adds aroma and allure. 

Preparation:
1. Put noods in 500ml of rolling boil water for 3 min.
2. Drain and run some cold water over it gor lang ho!
3. Add the flavouring and sesame oil into a boil, add fresh boiled water from a kettle, stirring thoroughly.
4. Add your noods and enjoy.

Uses: Have it as a snack, or load it up a little for a fuller treat. Typically, a slice or two of canned meats, a leftover pork chop, a little choy sum makes a happy Hong Kong afternoon tea.
