Why we chose this: the Japanese scoured the earth and considered Australian wheat was the best for ramen making and have been at it in Ballarat since the mid 90s.
In the global search for the best ingredients that would satisfy their kokumotsu (grain) based healthy diets, the Japanese settled on Aussie-grown organic wheat. Going onto the 25th year now, they haven't looked back. This says a lot about the quality of wheat grown for Hakubaku ramen making.
This Hakubaku ramen is the next best thing to fresh made ramen. It's simple to prepare and easy to achieve an al dente finish.
Taste: soft grain, al dente when cooked right.
Preparation:
For soup noodles: Fully submerge in boiling water for 4min then drain. Add to your soup.
For stir fry noodles: Fully submerge in warm water for 3 min then drain. Rinse in cold water. Cook through during stir-fry.
Uses: Japanese soup noodle or yaki version.
