Why we chose this: You can’t improve on perfection, from the inventors of this sauce genre themselves Lee Kum Kee since 1888. If authenticity means anything to you this is it, same recipe, this premium grade still made only in Hong Kong using high quality oysters.
Like many tales of greatness, this sauce was created by accident. Some 130+ years ago, when the then chef and founder Lee Kum Shee overcooked his oysters, a brown saucy remnant was found at the bottle of the wok. Dabbing his finger in it to taste, he couldn’t help but notice the instant umami-hit and the rest as they say, is history.
From discovery to refining it down to a recipe, this premium version stays true to that original concoction. This oyster sauce is made by a slow reduction of the water used to poach carefully selected and cleaned oysters that were harvested on the same day of prepping. Spices and thickner are then added.
For a relatively recent invention, you can’t seem to go to any Chinese restaurant without seeing it. Choy sum, gai lan, bok hoy, choy sum, tofu all seem to have that ubiquitous LKK glaze. Now it’s time to add that pro touch to your home cooking.
Taste: Savoury, umami-loaded, oysters, soy sauce, salty.
Uses: At it to your stir fries or spoon a light coating on top of steamed veggies, tofu, fish. Marinade meats and mock meats.
