Why we chose this: a simple, all natural production hitting just the right amount of sweet notes
Its moniker “aji no haha” (mother of taste) is apt. For if it’s Japanese, it’s probably got mirin in it.
For those unfamiliar, mirin is what gives Japanese dishes their subtly sweet backdrop. Produced from sweet brown rice which when fermented forms a complex carbohydrate giving the seasoning its sugar content without added sugar- this process they call “koji saccharification”.
The cornerstone of an entire cuisine, this is definitely a pantry essential.
Taste: Medium sweetness, lightly sour with a slight acidic tang.
Uses: Nearly all Japanese dishes, marinades, dressings, stir fries, broths (for ramen, udon).
