Why we chose this: multi-dimensional in flavour - while a lot of kimchi are mostly sour, Obap’s is strong on heat and savoury too
They’ve done it just right so you can easily duck into your fridge and pick out a few slices as a random snack. Both the sesame and chilli notes are prominent, as is the surprising crispness of the cabbage. You still get that preserved veg tang we know and love but they were clever enough to not let that dominate.
Taste: Hot, savoury, sour. Crisp, refreshing texture. Sesame and chilli.
Uses: for banchan, appetisers even as a random snack. Korean homely classics kimchi fried rice, omelette, hotpot.

Ingredients: Cabbages (79%), Rice Vinegar (Water, Glutinous Rice, Syrup (from Tapioca), Sugar, Salt, Miso Paste, Sesame Oil, Red Chilli Powder, Soybean Oil, Acidity Regulator (270).
Packaging: Glass jar, twist top.
Storage instructions: Tightly close the lid after use and keep refrigerated.
