Why we chose this: Kewpie made it, so we paid it. There is no substitute.
It takes a special type to invent your own food genre. Japanese mayo synonymously known as Kewpie mayo was invented in the 1920s when the Japanese creator travelled to the US and tasted mayo for the first time. He came back to Japan adding his own spin, creating a less acidic, sweeter and thicker spread than the Western kind.
Kewpie mayo is made with egg yolk only (vs whole egg of the regular mayo) and also comprises of soybean oil and a milder vinegar. It's this simple combination that makes Kewpie mayo more palatable than the tangier regular mayo.
Taste: Custardy, mildly sweet mayo.
Uses: Just like regular mayo, use it in salad dressing, sandwich spread and all fried goodies (tempura + more). Obviously great in sushi rolls.
