Why we chose this: a vegan’s secret weapon for making flavourful broths, stews and legumes.

Love Japanese kombu but can’t find any due to those pesky Aussie biosecurity restrictions? Meet dasima, the Korean-grown counterpart with lower iodine levels to keep the Customs crew happy.

Dried kelp is an essential ingredient in East Asian cuisine with a multitude of uses. Combine with bonito flakes to make a simple dashi, throw some into a pot of cooking beans or even deep fry and toss in sugar for the Korean dasima bugak (kelp chips).

Please note, dried kelp contains high levels of iodine. Expecting and breastfeeding mothers and those with hyperthyroidism should limit use.

Taste: Meaty, umami, seawater.

Uses: Add to broths and stews. Great for enhancing rice and legumes - simply add a postage stamp sized portion to your pot. Roast it and blend with salt for an umami rich seasoning.

Preparation: Do not wipe or wash your kelp prior to use, the white powder that may be present on the surface of the kelp is minerals and salt that have crystallised during the drying process.

Cold infusion: soak 5-10g kelp per litre of room temperature water for 8-10 hours. Optional additions: dried seafood (bonito, anchovy etc) or dried shiitake for a #vegan substitute. Pass through a strainer and heat your stock over a low-medium heat until the desired temperature is reached. 

Hot infusion: add 5-10g kelp and 1L cold water to a pot. Heat gently over a low heat. Remove kelp when steam starts to rise from the surface of the water. Optional: add flavour additions (bonito, shiitake etc) and bring to boil. Once boiled turn off heat and allow to cool.

Storage instructions: Store in a cool dry place. Once opened, transfer unused contents to an airtight container.
