Why we chose this: ideal viscosity and colour, no added preservatives, non-GM

Dark soy is the unsung hero of Asian pantry staples. It doesn’t feature much on tabletops as it is not commonly used as a condiment or dipping sauce (there are exceptions of course) and thus, out of sight, out of mind.

But it does a heap of grunt work. Where does the appetising colour and velvety texture of braised tofu, red pork, soya chicken, claypot rice and the famed yau wong chow mein (soya king stir-fry noodles) come from? Yes, the answer is this longer fermented cousin of the common light soy, otherwise known as lao chou (old extraction).

It’s the longer fermentation and the addition of sugar that contributes to its thicker and less saline character, making it ideal for marinades or slow-cooking techniques e.g. braising. The flavour is gentler than light soy and the texture prevents it from being “cooked out”.

Taste: Mostly salty but a little sweet, malty, touch of mulled wine, it runs but it has viscosity.

Uses: Marinating or braising tofu and meats that require browny-reddish colour and a silken texture in the sauce. Great for adding both flavour and colour to wok-fry staples of rice or rice noodles and egg noodles.

Ingredients: Soy sauce (40%) (water, salt, soybeans, wheat flour), colour (150a), ugar, colour (150c), salt.

Packaging: Medium table sized glass bottle with flip lid.

Storage instructions: Tightly close lid after use and keep refrigerated.
