Although mainly used in Japanese cuisine, there's no need to limit yourself. These light and delicate "dancing" dried fish shavings add instant umami to any dish. Yes, commonly used in stocks as well as garnishes for various Japanese soup noodles, there's no reason why you can't add that zing to cream soups or even pastas.

Taste: Think smoked fish, salty, briny tissue thin flakes of punchy flavour.

Uses: Make a kachyu "simple stock", a couple handfuls in hotwater, garlic and seasoning of your choice. A great base ingredient to any broth or soup. Do it for your ramen, do it for your udon, do it for your instant noodles. Use it not just in stock but also as a playful garnish, watch it wiggle and dance on your hot meals.
