Why we chose this: Because Pun Chun are masters of balance, even when there’s a lean.
Some black vinegars taste too alcoholic or tangy, detracting from your dumpling dipping enjoyment. But Pun Chun hits the right notes, so yes, whilst vinegars are meant to be a little sour and acidic, Pun Chun’s tang is just enough to tantalise your palate.
Taste: A light zest hit, medium level tang, think balsamic with a hint of soy.
Uses: Chinese black vinegars are used in western Chinese e.g. Xi’an, Sichuan pulled noodles (hot or cold). It is also used in cold appetisers like cucumber salad as as a dipping sauce for cold cuts. Dumplings are often dipped in this black vinegar too, as a way to cut through oils and balance out any “gaminess” in meat dumplings - used in braises and marinades for the same reason.

Ingredients: Rice vinegar (55%), water, colour (E150a), salt, spices.
Packaging: Medium table sized glass bottle with flip lid.
Storage instructions: Tightly close lid after used and keep refrigerated.
Allergens: Traces of milk and wheat (derived from colour E150a). Produced in a factory where cereals containing gluten, peanuts, soybeans and their products are also handled.
